Banana Bread recipe (adapted from Martha Stewart)
Ingredients:
Cinnamon Sugar to dust pan 1 stick unsalted butter at room temperature 1 cup sugar 2 eggs 1 1/2 cups all-purpose flour 1 tsp. baking soda 1 tsp. salt 1 cup mashed very ripe banana (about 2 bananas) 1/2 cup sour cream (I use the fat-free version) 1 tsp. vanilla extractDirections:
1. Preheat the oven to 350 degrees. Grease a loaf pan (I use cooking spray) and then lightly dust the interior with cinnamon sugar.
2. With an electric mixer, cream the butter and sugar until light and fluffy. Add the eggs, beating well.
3. Sift the dry ingredients together and then combine with the butter mixture. Blend well. Add everything else and stir well.
4. Pour mixture into the prepared pan (leave a little to lick the bowl-it’s YUMMY!)
5. Bake 1 hour, until a cake tester comes out clean. *Can slice it and toast it for breakfast, too!
